This is one of my favorite salads. A recipe on a package of Athenos reduced fat feta cheese was the starting point. Here is the original recipe, and then I’ll point out what I did differently. I don’t tend to follow recipes exactly. I consider them inspiration.

Our broker’s office doesn’t have a meeting room large enough to accommodate all of the agents. So they hold monthly meetings elsewhere.
